  • CHICKEN CHASSEUR (“Chasseur” means “hunter” in French)

Chicken chasseur or (poulet sauté chasseur) is a classic, hearty French stew made with sauteed pieces of chicken, serve with a sauce made using a combination of brown chicken stock, tomato sauce, mushrooms, shallots, bayleaf, thyme, dry white wine and fresh herbs (tarragon and parsley) . Seasoned with pepper and salt and finished with butter. It is best made using a cast iron dutch oven. Goes well with a side of potatoes or tagliatelli and a bottle of dry white wine like a Muscadet wine.

The sauce for hunter’s chicken is typically prepared and thickened by the process of reduction. Hunter’s chicken becomes more flavorful after sitting and then being reheated, which allows the flavors of the ingredients to further intermingle.
